Shredded Pork with Sweet Bean Sauce

- 8 oz pork tenderloin is the best or at least no bone
- 8 cm long section of shallot only white part
- 1 tbsp sweet bean sauce
- 1 tbsp dark soy sauce
- 1 tbsp cooking wine or rice wine
- 2 tsp cornstarch
- 1 teaspoon salt
- 1 tablespoon vegetable oil

Step 1
Stir fry
Cooking with different sauces is quite simple and easy.Sweet bean sauce is mostly used in Beijing duck, and stir-fried shredded pork.
Cut pork into shreds and then marinade with starch , salt and cooking wine. Then stir-fry the pork shreds until they becomes slight pink and pour dark soy sauce and sweet bean sauce in to stir fry until the color of each shred becomes almost the same.
Finally, place some shallot shreds on the top of the serving plate.
Serve:
Cut the pork into shreds. And shallots whites into shreds too.
Prepare a bowl, put the pork shreds in and then add salt, cooking wine, cornstarch into the bowl, mix thoroughly and marinade for around 10 minutes.
Heat up oil in a wok; add the marinaded pork shreds to stir-fry 2 minutes or until pork become yellowish-white.
Add dark soy sauce and sweet bean sauce. Continue stir-fry until all the pork shreds are in the same color. Turn off fire and move shreds out to a plate.
Sparkle the the shallots shreds on the shreds and serve hot.
