Creamed Celery on Toast

Ingredients
- tablespoon butter
- 1 small onion, chopped
- 1 cup celery, chopped
- 1 cup White Sauce - Bottom of Page
- 1/2 cup chicken broth
- 4 slice
- 1 s bread, toasted
- WHITE SAUCE
- 1 cup milk
- 2 tablespoons white flour
- 2 tablespoons butter

Preparation
Step 1
Prepare White Sauce, either with all milk or using chicken broth in
place of half of the milk. Sauté onion and celery in butter until
tender. Add to the White Sauce. Season to taste with salt and black
pepper. Toast bread. Cut on the diagonal and lay each piece on a
plate separating the diagonals slightly. Pour equal amounts of the
celery mixture over each piece of cut toast.

Melt butter in pan. Turn off heat. Sprinkle flour evenly into
butter, stir and slowly drip milk into mixture while stirring to
remove all lumps. Turn heat on low and stir as mixture thickens.
This is a good consistency for creamed vegetables, gravy, diced
meats and egg dishes.
