- 1/2 pound chorizo, chopped
- 1 shallot, finely chopped
- 1/4 red bell pepper, chopped
- 2 tablespoons chopped parsley
- 3/4 cup chilled pie crust dough

In a skillet pan, sauté the chorizo with the shallot and bell peppers on low heat for 2–3 minutes, or until the pepper is tender. Take off the heat and stir in the parsley. Allow the mixture to cool.

Preheat Airfryer to 390°F.

On a clean surface, roll out the pie crust dough, approximately ___ inches thick. Use a cookie cutter to cut 20 rounds from the rolled-out dough. Scoop a spoonful of the chorizo mixture onto each round. Press the edges together between the thumb and forefinger, creating a scallop pattern.

Place 10 empanadas into the cooking basket and slide into the Airfryer. Cook for 10 minutes, turning once after 5 minutes, until browned. When finished, repeat the process to cook all 20 empanadas.
