Ingredients

  • 1 can (20 oz.) crushed pineapple, drained
  • 1 and 1/2 tsp. vanilla
  • 1 cup shortening
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 tsp. salt
  • 1 and 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 4 cups flour

Preparation

Step 1

Stir vanilla into pineapple. Set aside.

Cream shortening, sugars and eggs. Add pineapple mixture, stir well and then set aside.

Sift flour with the salt, baking soda and baking powder. Stir flour mixture into pineapple mixture, mixing well. Drop by teaspoonfuls onto baking sheet and bake in a 350° oven for 12 to 15 minutes.
