Ingredients
- 1 Tbsp olive oil
- 4 Tbsp butter
- 1 c chopped onion
- 1/2 c chopped celery
- 2 cloves garlic, minced
- 1/4 c flour
- 1 qt half and half
- 14 oz chicken broth
- 1 c cooked chicken, chopped into bite sized pieces
- 1/2 tsp parsley
- 1/2 tsp thyme
- 1 tsp salt
- 1 c shredded carrots
- 1 pkg gnocchi
- 1 c spinach

Preparation
Step 1
Put olive oil and butter in a Dutch oven and cook until butter is melted.
Add onion, celery and garlic. Cook until softened.
Mix in flour. Add half and half and simmer until think.
Stir in chicken broth.
Add chicken, parsley, thyme, nutmeg, salt, carrots and gnocchi. Cook until gnocchi is done.
Stir in spinach and cook until wilted.
