Ingredients
- 1/4 cup Oatmeal
- 2 medium bananas mashed
- 1/4 cup creamy raw Almond butter
- 2 TBSP maple syrup
- 2 TBSP ground flaxseed
- 1 tsp vanilla extract
- 1/2 cup brown rice flour
- 2/3 cup shredded coconut
- 1/2 cup pecans finely chopped
- 1 tsp baking soda
- 1/4 tsp sea salt
- 1/4 cup chocolate chips.

Preparation
Step 1
Preheat oven to 350 degrees
Line 2 baking sheets with parchment paper
Step 2
In a medium bowl whisk together the mashed bananas, butter, maple syrup, flaxseed, and vanilla to combine. In a large bowl, combine flour, oatmeal, coconut, pecans, baking soda and salt. Stir in the banana mixture to combine. Stir in the chocolate chips.
Step 3
Drop heaping tablespoons of the dough onto the lined baking sheet. Use your fingertips to flatten each cookie to about 1/2 inch thick.
Step 4
Bake for about 12c minutes or until golden brown. Cool completely before serving.
