Erin’s Chicken Noodle Soup

I usually just fly by the seat of my pants on this soup, but I finally wrote it down!

Ingredients
- 2 T. Oil
- 1 c. Diced Carrots
- 1 c. Diced Celery
- 1 c. Diced Onions
- 12 c. Chicken Broth
- 2 t. Salt
- 1 t. Pepper
- 1 t. Poultry Seasoning
- 1 Chicken Bouillon Cube
- 1 c. Fresh Green Beans trimmed and cut into 1” pieces
- 2 c. Large Diced Cabbage
- 1/2 c. Frozen Peas
- 1/2 c. Frozen Corn
- 18 oz. Reame’s Frozen Egg Noodles
- 1 lb. Shredded Rotisserie Chicken

Preparation
Step 1
Brown carrots, celery and onion in oil over med-high heat.
Step 2
Add chicken broth, green beans, salt, pepper, poultry seasoning and bouillon. Bring to a boil, reduce to a simmer for 30 mins.
Step 3
Add egg noodles and simmer for 13 minutes.
Step 4
Add peas, corn and cabbage. Simmer for7 mins.
Step 5
Add chicken in last couple of mins. to warm through!
