- 2 1/2 sticks unsalted butter cut in cubes and melted
- 2 large egg yolks
- 1-2 t lemon juice to taste
- Salt and pepper

After melting the butter, in a blender pulse the egg yolks and lemon juice until smooth. With the blender running, slowly pour in the warm melted butter, leaving the white milk solids in the pan. Blend until silky, about two minutes. Season with salt, pepper, and lemon juice to taste. Spoon over poached eggs set a tab crisp slices of Canadian bacon and toast English muffins .
