Avocado Ice Cream

This recipe was found in the Costco Connection magazine and is attributed to Vevian Vozmediano at Index Fresh. I first made it because my partner cannot eat dairy products due to a medical issue. The vegetable fat in the avocados and the coconut oil take the place of milk fat in the ice cream.

Ingredients
- 3 medium avocados, halved, seeded and peeled
- 1/2 cup honey
- 1 T vanilla extract
- 2 T coconut oil
- coconut shavings, toasted, for garnish

Step 1
Place ingredients in food processor and blend until smooth. Pour the mixture into an airtight container and freeze for at least 4 hours. Garnish with toasted coconut shavings. Makes one pint.
