Shrimp And Corn Cakes (Tord Man Kao Pod Goong)

These fish cakes are made with shrimp and corn, and unlike Thai fish cakes, they are very mild so great if you don’t feel like eating something spicy. They make for a great snack or appetiser, and only take around 20 minutes to make.

This recipe should make about 8 to 10 cakes depending on how big you make them, which should be enough for 2 to 4 people.

Ingredients

  • 1 cup sweetcorn
  • 1 cup all purpose flour
  • 1 egg
  • 1/2 cup peeled shrimp
  • 1/2 teaspoon ground pepper
  • 3 cloves garlic
  • 2 tbsp coriander stalks
  • 3 tbsp oyster sauce
  • 1 tbsp soy sauce

Preparation

Step 1

Start by finely chopping 2 tbsp of coriander stalks, and 3 cloves of garlic, then add to a mixing bowl.

Step 2: Next finely chop 1/2 cup of peeled shrimp and add to the bowl. Make sure the shrimp are completely shell free before chopping.

Step 3: Then add 1 egg, 1 cup of sweetcorn, 1/2 teaspoon of ground pepper, 3 tbsp of oyster sauce, 1 tbsp of soy sauce, and 1 cup of all purpose flour to the bowl, and mix everything together by hand.

Finally just scoop out some of the mixture and shape into a cake, then deep fry until golden grown on both sides. Repeat until all of the mixture is used up, then serve with sweet chilli dipping sauce, or any kind of spicy dipping sauce, and enjoy!
