Ingredients
- Graham Cracker Crumb Crust:
- Spring form 9” cake pan
- 1 ½ cup graham crackers, crushed
- (about 10 crackers)
- 1/3 cup sugar
- 6 T. melted butter
- ½ t. cinnamon
- Cheesecake:
- 2 eggs
- ½ cup sugar
- 2 t. vanilla
- 1 ½ cups sour cream
- 1 wide strip orange rind
- 1 narrow strip lemon rind, cut up
- 1 lb. (2 8-oz. packages) softened cream cheese, cut into fifths
- 2 T. melted butter

Step 1
Crust:
1. Mix all ingredients in a medium bowl until well blended.
2. Press into spring form cake pan or regular 9” pie plate
3. Bake 375 degress for 7 minutes.
Cheesecakes:
1. Put the eggs, sugar, vanilla, sour cream and orange and lemon rinds into a blender or a Cuisinart Food Processor. Process for around 15 seconds.
2. With motor still running, gradually alternately add pieces of cream cheese and melted butter. Blend until smooth. Stop motor to push down with spatula, if necessary.
3. Pour cheese mixture into the spring form pan with baked graham cracker crumb crust.
4. Bake in preheated oven at 325 degrees for 35 minutes or until set in center.
5. Turn off heat and leave in oven for another 15 minutes.
6. Remove and let cool on rack
7. When cool, place in refrigerator for 2 hours before serving. The cake is even better when it is allowed to chill overnight before serving.
A cheese cake can be served plain or with a topping of fruit.
