Cheesy Leftover Ham and Rice Casserole

- 2 (10 oz) cans Cheese Soup (found by the cream soups)
- 2 and 2/3 cups water
- 1 tsp Italian Seasoning
- 1 tsp garlic powder
- 1 /2 tsp salt
- 1 /2 tsp black pepper
- 1 1/2 cups uncooked Jasmine rice
- 3 cups broccoli florets (I used fresh, but you could substitute with frozen)
- 2 cups chopped ham
- 1 cup shredded colby jack cheese

I did not have Colby cheese so I shred some cheddar I had. So, so delicious. I used jasmine rice and it took 60 minutes. Changed a few things – used brown rice instead of jasmine, and used cream of chicken bc that’s what I had on hand. Please added to your recipe notes that this recipe can take longer than an hour to cook…this could actually be a great crock pot recipe for a family to walk away from for hours so that the rice can cook.★★Shawn December 3, 2018 at 10:50 am ReplyHonestly, I’m so confused why there are a few people having issues with their rice cooking? I make this all the time and never have an issue. I wonder if it has something to do with the type of casserole dish used? A thicker dish would be more insulated and take longer, while a glass or metal dish would probably be quicker to heat. I’ll have to test it with a few different pans to see.John N Butz December 29, 2018 at 5:23 pm ReplyI used a foil pan and it took an hour and a half to cook the rice. If I were to do it again I’d partially cook the rice first if I really wanted it to only take an hour. and, although it was ok, I found it very bland for my taste, so I’d probably add some sauteed onion and actual garlic rather than just garlic powder. Maybe some kind of mild chili too. I also subbed 1 can of cheese soup for cream of chicken. I only changed it because I had to use what I have. This was wonderful and a huge hit! I didn’t have canned cheese soup but I had a block of cheddar cheese so I made 20oz of cheddar cheese soup as a substitute (which was delicious and I sort of regret using for this recipe) .I added 3 cups of broccoli but put it in the blender because that would have been about 4 massive pieces. So I might have added a bit extra broccoli than the recipe called for. For the ham I used leftover ham slices for sandwiches. I was not particularly worried if it takes additional time to cook because it’s a casserole and I can cook it at lunch time for dinner.So, The rice was 100% cooked after the time the recipe called for and there was no liquid at all. I didn’t really like the taste of the herbs and probably would omit them if I make again.Michele October 9, 2018 at 2:53 pm ReplyI’ve made this twice now and the rice cooks perfect. The 2nd time I left out the meat. I used 2 cans broccoli chz soup, chicken stock for water, a ranch packet , pepper, salt, garlic powder, broccoli, and cauliflower. I only used a cup of Jasmine rice so it would be creamier. My first time seemed kinda dry. Maybe all of the ones having issues are not using Jasmine or not covering with foil. I baked for 60 minutes, topped with cheese, and then broiled for a few minutes.
