Jalapeno Popper Corn Salad

Ingredients
- 1 medium onion, quartered
- 2 jalapeno peppers
- 1 cup sour cream
- 1 cup mayonnaise
- 2 oz. cream cheese softened
- 1 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp pepper
- 8 ears cooked and cooled corn
- 2 tsp cumin
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 cup shredded sharp cheddar
- 1 cup shredded pepper jack cheese
- 1/2 cup bacon

Preparation
Step 1
Broil onions and jalapenos 4 inches from heat 3 - 5 minutes on each side till lightly charred.
Cool completely - chops into 1/2 inch pieces
Combine sour cream, mayonnnaise, cream chees and spices.
Stir in corn, cheese and half of the bacon and the onion and jalapenos.
Top with remaining bacon.
