- 3 cups veggies (spinach, roasted zucchini, squash, peppers, red onions, etc.)
- 1 cup fresh herbs, chopped
- 1/2 cup cheese - feta, goat, parmesan, etc.

Step 1
Preheat the oven to 375. Spray an oven-safe dish with oil. Roast veggies or saute them with fresh herbs in a skillet with oil until tender. Add the cheese and stir until combined.
Place the salmon fillets on cutting board. Use a sharp knife to make a pocket in the fillet. Fill the pockets with the filling. Transfer the fillets to the prepared baking dish and sprinkle with salt and pepper. Bake on the center rack for 20-30 minutes.
