Black Bean Salsa

A refreshing summertime alternative to traditional salsa.

Ingredients

  • 2 15 oz cans black beans (drained)
  • 1 15 oz can corn (drained)
  • 2 tomatoes (diced)
  • 1/4 C red bell pepper (diced)
  • 1/4 C red onion (diced)
  • 1/4 C green onions (diced)
  • 1/4 C pineapple (diced)
  • 1 tbsp chopped cilantro leaves
  • 1 jalepano (seeded and minced)
  • 4 tbsp sherry vinegar
  • Juice of 1/2 lime
  • 3 tbsp honey
  • pinch ground cumin
  • 1 tbsp salt
  • 1 tsp black pepper

Preparation

Step 1

1. Mix all ingredients together in a bowl and refrigerate for at least 1 hour.
