Ingredients
- 2 15 oz cans black beans (drained)
- 1 15 oz can corn (drained)
- 2 tomatoes (diced)
- 1/4 C red bell pepper (diced)
- 1/4 C red onion (diced)
- 1/4 C green onions (diced)
- 1/4 C pineapple (diced)
- 1 tbsp chopped cilantro leaves
- 1 jalepano (seeded and minced)
- 4 tbsp sherry vinegar
- Juice of 1/2 lime
- 3 tbsp honey
- pinch ground cumin
- 1 tbsp salt
- 1 tsp black pepper
Preparation
Step 1
1. Mix all ingredients together in a bowl and refrigerate for at least 1 hour.
