  • 1 medium red onion, thinly sliced
  • 1 cup apple cider vinegar
  • 1 1/2 cups olive oil, divided
  • 6 cloves garlic
  • 1/2 cup mayo
  • 1 1/2 lbs ground beef
  • 1/2 tsp black pepper
  • 3/4 tsp kosher salt
  • 1 8oz brie round, cut into 4 rounds
  • 1 bunch of upland watercress (about 1 1/2 cups)
  • 4 pretzel rolls, split

Step 1

preheat oven to 350. combine red onion, apple cider and 1/2 cup olive oil in a medium bowl; let stand at least 1 hour. strain.

place remaining oil and garlic in a small saucepan; cover with aluminum foil. roast garlic in oven until soft and light golden brown,, about 30 mins. let cool 1 hour. remove garlic from oil; place garlic in bowl of food processor. add mayo to food processor and process until smooth.

preheat grill to high, 15 to 20 mins. mix the ground beef, salt and pepper until completely combined. shape beef into 4 (6oz) patties, about 1/2 inch thick.

place onions and patties on oiled grates and cook to desired degree of doneness, 4 to 5mins per side for medium. just before burgers are done, place 1 slice of cheese on each patty and cook until cheese melts, about 15 seconds.

spread garlic mayo evenly onto bun halves. places burgers and onions; top with watercress.
