Ingredients

    lb. yellow-eyed beans

  • 1

    cup sugar

  • 1/2

    lb. salt pork [Scald before using and cut down through to the rind]

  • 1

    onion - whole

  • 1

    tsp. dry mustard

Directions

Soak beans overnight. Boil until skins burst when you blow on them. [about 20-30 minutes] Drain Put onion in bottom of bean pot. Mix the sugar and dry mustard with the beans. Place the beans into the bean pot. Add the salt pork. Cover with water. Bake at 300 degrees for 8 hours. Check from time to time to make sure there is still enough water. For the last hour, remove the cover to let the beans brown some. The water will be just about down out of sight then, but leave it. DO NOT STIR.
