Ingredients
- 2 cups all-purpose flour
- 1 Tbsp. baking powder
- 1 Tbsp. minced fresh thyme
- 1 tsp. sugar
- 1/2 tsp. kosher salt
- 4 Tbsp. cold unsalted butter, cubed
- 2 oz. finely shredded Gruyère (about 3/4 cup)
- 3/4 cup finely diced cooked ham
- 1 cup + 2 Tbsp. heavy cream, divided

Preparation
Step 1
Preheat oven to 425°. Line a baking sheet with parchment paper; set aside. Combine flour, baking powder, thyme, sugar, and salt. Cut in butter with a pastry blender or fork until pea-sized. Stir in Gruyère and ham, then stir in 1 cup cream. Turn dough onto a lightly floured work surface, knead just until combined, and pat into an 8-inch square. Cut dough into four squares, then cut each square into four triangles. Arrange scones on prepared baking sheet, spacing 1-inch apart. Brush tops of scones with remaining 2 Tbsp. cream and bake until golden, 20–25 minutes.
