Ingredients
- Hickory wood chips, soaked in water at least 30 min
- 1/3 c Dijon mustard
- 2 T chili powder
- 2 T firmly packed brown sugar
- 1 T smoked paprika
- 1 T ground cumin
- 2 t salt
- 1 t garlic powder
- 1 t onion powder
- 7 lb Boston butt pork roast

Preparation
Step 1
Preheat smoker to 225-250. Sprinkle soaked hickory chips over coals. Place a drip pan under smoker rack.
In sm bowl, stir together mustard & next 7 ingredients; rub mixture all over pork. Place pork on smoker rack over drip pan.
Cook, covered with lid for 7-10 hrs., turning occasionally or until meat thermometer inserted in thickest portion registers 190. Remove from heat & let stand 30 min. Shred pork, discarding fat & bone.
