Ingredients
- 1/4 cup orange juice
- 1 1/2 T cornstarch
- 1 lb boneless chicken breasts, cut into strips
- 3/4 cup chicken broth
- 1 1/2 T soy sauce
- 2 1/2 t vegetable oil
- 1 clove garlic, minced
- 1 T minced fresh ginger OR 1 1/2 t ground ginger
- 1 1/2 cups snow peas or green beans
- 1 med red bell pepper, cut into thin strips
- 3/4 cup green onion, sliced
- 1 cup frozen broccoli
- 1 med carrot, thinly sliced
- Cooked white rice

Preparation
Step 1
In a shallow bowl, combine orange juice and cornstarch; mix well.
Stir in chicken. Cover and chill for 2 hours.
Drain chicken and discard juice.
In a small bowl combine broth and soy sauce. Set aside.
In a wok or large nonstick skillet, heat oil over med heat.
Add garlic and ginger and stir fry for 30 seconds.
Add chicken and stir fry for 30 seconds.
Add vegetables and stir fry until crisp-tender, about 5 minutes.
Stir in broth mixture and heat through.
Serve over cooked rice.
