Ingredients

  • 8 boneless chicken breasts
  • flour, salt and pepper for dusting chicken
  • 6 T butter
  • 2 T flour
  • 3/4 cup chicken broth
  • 3/4 cup Chablis or other white wine
  • 1/4 cup sliced green onions
  • 1 (4 oz) can button mushrooms
  • 2 cups marinated artichoke hearts

Preparation

Step 1

Preheat oven to 350.
Dust chicken with salt, pepper, and flour.
Melt 4 T butter in shallow baking pan.
Place chicken in pan and bake uncovered for 20-30 min until almost tender.
Meanwhile melt remaining 2 T butter in saucepan.
Stir in 2 T flour. Add broth and wine and stir until thickened and smooth.
Remove chicken from oven and turn over.
Sprinkle with green onions, mushrooms, and artichoke hearts.
Pour sauce over chicken and bake at 325 degrees for 20-30 minutes.
