CHEWY TOFFEE COOKIES

I was looking for a chewy toffee cookie recipe to make as sandwiches with butter cream... these are perfect... but even on their own fantastic !!

Ingredients

• 3/4 cup butter softened
• 3/4 cup white sugar
• 3/4 cup light brown sugar
• 1 tsp baking soda
• 1/2 tsp salt
• 1 tsp vanilla
• 2 large eggs
• 2 3/4 cup white flour
• 1 1/2 - 2 cups toffee bits

Preparation

Step 1

Preheat oven to 375.

Cream butter, sugars, soda and salt. Mix well for 2 minutes.

Add vanilla and eggs and mix till fluffy. 1-2 minutes.

Add the flour and toffee bits and mix till no streaks remain.

Scoop onto cookie sheets and bake 10-11 minutes till golden brown - careful not to overbake !!
