Thai Fried Sweet Potato Balls (Khanom Khai Nok Krata)

This recipe is a common Thai street food that is a cross between a dessert and snack that consists of sweet potato mixed with flour, sugar and salt, which has been lightly deep fried. They are chewy on the inside, with a slightly crispy outer shell, and are best served freshly cooked.

They are very easy to make, and only 5 easy to find ingredients are needed, so this is a great recipe to try if you normally can’t find the right Thai ingredients. This recipe should yield about 8 balls which would be enough for about 2 people, so adjust depending on how many you want to make.

Ingredients

  • 100g potato flour
  • 1/2 tbsp all purpose flour
  • 200g chopped sweet potato
  • 3 tbsp sugar
  • 1/4 teaspoon salt

Preparation

Step 1

Steam 200g of chopped sweet potato for about 30 minutes. The exact time will depend on how thick you have chopped the potato, so prick with a fork to make sure the potato is soft.

Step 2: Now drain the sweet potato and place it in a mixing bowl. Mash it until it is smooth and lump free.

Step 3: Then add 100g of potato flour, 1/2 tbsp of plain flour, 1/4 teaspoon of salt and 3 tbsp of sugar to the bowl. Mix everything together thoroughly until you are left with a smooth mixture.

Step 4: Now take a small amount of the mixture and roll it into a small ball. Repeat until you have used up all of the mixture. Don’t place them on top of each other though as they are very sticky.

Step 5: Now deep fry the balls but be careful, as if the oil is too hot, the balls will burn. You only need to fry them for about 1 minute until they are light brown, then set them aside on some paper towel. Whilst frying turn them over to ensure they are evenly cooked all over. They are best eaten freshly cooked, and are usually eaten just like this, however we think they would also be nice with a dusting of powdered sugar, a drizzle of syrup, or even some ice cream!
