Ingredients
- 1 large European cucumber, shredded
- 1/4 t salt
- 1 cup whole milk plain yogurt
- 1/4 cup fresh mint, finely chopped
- 1 t lemon juice
- 1/4 t salt
- 1/4 t ground pepper

Preparation
Step 1
Place the shredded cucumber and salt in a fine mesh sieve
Let drain for 15 minutes
Shake to release any additional liquid then transfer to paper towel
Squeeze out as much liquid as possible.
Transfer to a medium bowl and stir in the yogurt, mint, lemon juice, salt, and pepper
