Ingredients
- 3 eggs
- 1 cup sugar
- ¾ cup oil
- 1 tsp vanilla sugar
- 2 tsp baking powder
- 3 ½ cups ground almonds
- ½ cup potato starch
- 8 oz. chopped nuts

Step 1
Beat eggs and sugar until thick and lemony. Add oil, vanilla, baking powder and ground almonds and mix well. Add potato starch to form sticky dough, then add chopped nuts by hand.
Using damp hands, form long narrow logs (they spread during baking) on lined cookie sheets. Bake at 350 degrees for 25-30 minutes. Cool slightly, slice, and dunk both sides in a mix of cinnamon and sugar. Lay slices on their sides and bake an additional 10 minutes.
