Ingredients

  • 1 (1/4-ounce) package dry yeast
  • 3/4 cup warm water (105 to 115°F)
  • 2 1/2 cups, plus 1/2 to 1 cup prepared biscuit mix
  • 1 teaspoon sugar
  • 1/4 cup (1/2 stick) melted butter

Step 1

1.Preheat oven to 400°F. Lightly grease baking sheets.
2.Dissolve yeast in water. Put 21/2 cups biscuit mix in a large bowl; stir in sugar. Add yeast mixture, stirring vigorously. Sprinkle work surface generously with remaining 1/2 to 1 cup biscuit mix. Turn dough out onto the surface and knead well, 15 to 20 times. Shape dough as desired. (I shape heaping tablespoons of dough into balls.) Place on prepared baking sheet, cover with a damp cloth, and let rise in a warm place 1 hour. Bake 12 to 15 minutes, or until golden brown.
3.Brush rolls with melted butter while they’re hot.
