Ingredients
- 4 large potatoes
- 3 spring onions (green part only), sliced up
- 1 red chilli, finely chopped
- 2 tsp garlic-infused oil
- 1 tbsp cooking oil
- 1 red pepper, chopped finely
- 6 rashers of bacon
- 1 bag of baby spinach leaves, chopped into fine strips
- 4 eggs
- ⅓ cup rice flour and tapioca flour mixed
- Salt and pepper

Preparation
Step 1
Method Heat oven to 180°C/350°F. Heat the two oils and cook the chilli and spring onions until soft. Add the bacon and cook, then chop into hunks. Peel and grate the potatoes. Squeeze out all excess liquid. Mix all ingredients together. Oil a tart pan and tip the mixture in and flatten the top. Bake in the oven for about 30 minutes.
