FREEKEH****Freekeh Salad with Halloumi

10/06/17 - VG for both and a nice make-ahead. I served it over mixed greens (which Dan didn't eat but I liked) and combined 1 teaspoon of honey and 1 teaspoon of a PC Black Label Peach Condiment and drizzled over everything at the end. White or even red balsamic drizzle should work with the honey just as well.

Ingredients
- 50 g freekah
- 25 g dried blueberries or cranberries
- 3 tablespoons Honey Lemon Dressing
- Sea salt and freshly ground black pepper
- 1 shallot, finely diced
- 2 tablespoons parsley, chopped
- 20 g toasted almonds or pecans (I used the latter)
- 90 g halloumi
- n.b. - 23/09/17 - rather than cooking the freekeh from scratch, I used one pouch of PC Blue Menu Freekeh with Brown Rice and roasted chicken flavour. Easier and just as good, in the tasting stage at least.

Preparation
Step 1
Cook Freekeh in rice cooker for one cycle on brown rice, using broth or water and a pinch of sale. Place into a serving bowl, toss with the dressing and set aside until serving time.
Add the dried blueberries, onion, parsley and salt and pepper to the freekeh and toss together gently.
Slice the halloumi into 1/4" slices. Heat a non-stick frying pan on medium-high heat and cook the halloumi until it is golden brown on both sides (no oil required)
Plate the freekeh over the greens, top with the cheese and sprinkle with the nuts. Drizzle with the honey/balsamic mixture and serve.
