Ingredients

  • 2 egg yolks
  • 2 cups ice water
  • 1-3/4 cups all-purpose flour
  • 1/4 cup cornstarch
  • Vegetable oil
  • 12 medium shrimp, peeled and deveined
  • 3/4 lb. fish fillets, cut into 2" square pieces
  • 1 sweet potato, peeled and cut into 1/2" slices
  • 1 sweet onion cut into 1/2" slices and separated into rings
  • 1 green pepper, seeded and quartered
  • 12 whole mushrooms
  • Soy sauce

Step 1

In medium bowl beat egg yolks and water. With wire whisk, stir in flour and cornstarch. Do not overbeat, batter should be lumpy.

Pour enough oil to measure about 2 inches into fryer or dutch oven, heat to 375 degrees. Dry season food and vegetables on paper towels, then dip a few pieces at a time into hot oil. Deep-fry 30 second to 1 minute. Remove with slotted spoon and drain on paper towels. Serve with soy sauce.
