Roast Sticky Chicken

Ingredients
- 4 teaspoons salt
- 2 teaspoons paprika
- 1 teaspoon cayenne
- 1 teaspoon onion powder
- 1 teaspoon thyme
- 1 teaspoon white pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 5 pounds roasting chicken
- 1 cup chopped onion

Preparation
Step 1
1. Mix all spices. Rub into chicken - inside and out. Place in plastic bag, seal and refrigerate overnight.
2. Stuff cavity with onion, place in roasting pan. Roast at 250 for 5 hours (not a typo!). Baste every half hour after the first hour with pan juices. Juices will caramelize in pan and chicken will turn golden brown - ignore pop-up thermometer!
3. Let chicken rest 10 mins before carving.
Crockpot directions. Crumple up 4 ball sof aluminum foil, place in bottom of crockpot. Rub chicken and place directly on foil. Do not add water! Cook on low 6-8 hours.
My notes: Came out incredibly moist with a wonderful spice to it - my favorite roast chicken recipe thus far.
