Mains-Smothered Lentils
The slow cooker does all the work in this vegetarian stew. Serve over pasta, polenta, baked potatoes or rice.

Ingredients

- 2 C dry lentils, rinsed
- 1 medium onion, chopped
- 1/2 C celery, chopped
- 2 cloves garlic, minced
- 1/2 cup carrots, chopped
- 1 cup tomatoes, diced
- 2 teaspoon Italian seasoning
- 1/2 teaspoon cumin
- 1 bay leaf
- salt/pepper to taste
- 3 cups water

Step 1
Combine all ingredients in a slow cooker.
Cover. Cook 8 hours on low, 4 hours on high.
Add water as it is absorbed
(up to 1 additional cup).
