Ingredients

  • 1 Tbsp vegetable oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 boneless, skinless chicken breast halves, cut into 1-inch pieces
  • 1 cup prepared chunky salsa, strained
  • 1 1/2 cups grated cheddar
  • 1 1/2 cups grated Monterey Jack
  • Warm tortillas

Step 1

Preheat oven to 350 degrees. Butter 8-inch-square baking dish. Heat oil in heavy medium skillet over medium heat. Add onion and sauté until translucent, about 6 minutes. Add bell pepper and sauté until soft, about 4 minutes. Transfer to bowl using slotted spoon. Add chicken to skillet and cook until opaque, stirring occasionally, about 6 minutes. Transfer to prepared baking dish. Spoon onion mixture over. Pour salsa over. Top with cheeses. Cover and bake until cheese melts, about 10 minutes. Serve immediately with tortillas.
