Ingredients
- 1 lb. ricotta cheese
- 1 lb. shredded Mozzarella cheese
- 3/4 cup parmesian cheese, grated
- 1 lb. spinach, cooked &grained ( squeeze out as much water as possible)
- 2 eggs
- Black pepper to taste
- 1 tsp. sweet basil
- 1 box jumbo shells – about 32
- 5 cups spaghetti or marinara sauce
Preparation
Step 1
1. In large bowl mix Ricotta cheese, spinach, Mozzarella cheese (save some for topping), Parmesian cheese, eggs, pepper & basil.
2. Fill each shell with mixture. Fill pan ¼ full with marinara sauce. Place shells in sauce & top with Mozzarella cheese. Spoon a little sauce over each shell. Bake about 10 minutes at 450° (20 – 25 minutes at 425° if mixture has been refrigerated)
