Jumbo Stuffed Pasta Shells

Ingredients

  • 1 lb. ricotta cheese
  • 1 lb. shredded Mozzarella cheese
  • 3/4 cup parmesian cheese, grated
  • 1 lb. spinach, cooked &grained ( squeeze out as much water as possible)
  • 2 eggs
  • Black pepper to taste
  • 1 tsp. sweet basil
  • 1 box jumbo shells – about 32
  • 5 cups spaghetti or marinara sauce

Step 1

1. In large bowl mix Ricotta cheese, spinach, Mozzarella cheese (save some for topping), Parmesian cheese, eggs, pepper & basil.

2. Fill each shell with mixture. Fill pan ¼ full with marinara sauce. Place shells in sauce & top with Mozzarella cheese. Spoon a little sauce over each shell. Bake about 10 minutes at 450° (20 – 25 minutes at 425° if mixture has been refrigerated)
