Rice With Green Pigeon Peas

Ingredients
- 5 cups white rice
- 1 can Gandules Verde Con Coco (green pigeon Peas with coco)
- 1/2 cup Sofrito, or you can buy the Goya Recaito
- 1 leaf of Mexican coriander
- 1/3 cup onions
- 1/2 cup tomato sauce
- 3 packets culantro y achoite
- 1/3 cup cilantro
- 1 teaspoon of garlic
- 2 teaspoons of cooking oil
- 1 teaspoon of salt or adobo ( I mix both)

Preparation
Step 1
Set stove to high heat. Add 2 tablespoons of cooking oil. Once the oil is hot, add 1 tablespoon of garlic and onions. Let simmer for about 1 minute. Then turn heat to medium heat and add tomato sauce. Stir and let simmer for 1 minute and add 3 packets of Culantro y Achoite and stir.
Add either 1 table spoon of adobe or salt. Stir. I like to mix both. Then add 1/2 cup of Sofrito. Add 1 leaf of Mexican coriander. Stir. Finally add the can of beans and stir.
Set stove to high heat and add 5 cups of water. Stir and wait until the water boils.
While the water is boiling, get 5 cups of rice and rinse with water. Once the water has boiled, pour the rice into the pot. Stir quickly as the rice will stick to the bottom of the pot.
SIDE NOTE: I just add enough water to cover the rice, you can test it to see if you have enough water by sticking your spoon in the middle of the rice, if it stands without falling then it has enough water. If the spoons falls, it has too much water. Try never to put too much water because it becomes mushy & over cooked.
If you think the water is not yellow enough, you can add another packet of Culantro y Achoite. If you are trying to watch how much salt you put in the rice, don’t add another one.
Stir the rice until you see little holes, as shown above. Then cover the rice and set the stove on low heat.
Wait about 15 to 20 minutes for the rice to cook then flip the rice (move it around so the top of the rice gets cooked as well). Once you flip the rice set stove to low and serve!
