Ingredients
- 2 lbs beef skirt steak
- 4 cloves garlic, minced
- 3/4 tsp salt
- 3/4 cup lime juice
- 1/4 cup vegetable oil
- 2 tbls chili powder
- 2 tbls ground cumin
- 1/4 tsp ground black pepper
- 3 large red sweet peppers
- 12 large green onions
- 16 6-7 inch flour tortillas

Step 1
1. Trim fat from steak. Place steak in a large resealable plastic bag. Set aside.
2. For marinade, mash garlic and salt together to form a paste. In a small bowl, combine garlic paste, lime juice, 2 tbls of the oil, the chili powder, cumin, and black pepper. Pour marinade over steak. Seal bag; turn to coat steak. Marinate in the fridge for 1 hour, turning bag once or twice.
3. Halve sweet peppers lengthwise, remove stems, seeds, and membranes. Trim green onions. Brush pepper halves and onions with the remaining 2 tbls oil. Stack tortillas and wrap in foil.
4. For gas grill, preheat grill. Reduce heat to medium high. Place peppers, onions, and tortillas in foil packet on grill rack over heat. Cover and grill peppers until lightly browned, onions are just tender and tortillas are warm. Transfer peppers and onions to a bowl, cover with foil to keep warm. Remove tortillas from grill.
5. Drain steak, discarding marinade. Add steak to grill. Grill about 4 minutes or until slightly pink in center, turning once halfway through grilling. Remove from grill. Thinly slice steak diagonally across the grain. Coarsely chop peppers and onions.
6. Fill warm tortillas with steak, peppers, and onions. Top with choice of toppings.
