Ingredients

  • 3 strips bacon
  • 2 large zucchini squash thinly sliced
  • 2 cups mushrooms sliced
  • 1/2 cup onion chopped
  • 2 cups tomatoes (can or fresh) chopped
  • 1/2 cup chicken stock

Preparation

Step 1

In a large skillet fry the bacon until crisp.
Remove the bacon and set aside.
Add the zucchini and onions and cook in the bacon drippings until onions are translucent.
Add the mushrooms and tomatoes and cook for another 3 or 4 minutes.
Add the chicken stock and stir up any of the brown bits from the bottom to pick up that flavor.
Salt and pepper to taste.
Crumble the bacon over the dish to serve.
Great to serve with or over rice.
Different vegetables can be added and substituted
