Ingredients

  • Crust:
  • Makes 1 (9-inch) quiche cut into 6 servings.
  • 1/2 cup butter, softened
  • 4 ounces cream cheese, softened
  • 1 cup all-purpose flour
  • Pinch of salt
  • Filling:
  • 4 eggs
  • 3/4 cup half-and-half
  • 1/2 teaspoon salt
  • 1 1/2 cups cooked chicken, cut or shredded into pieces
  • 2 cups frozen, chopped broccoli, cooked and drained well
  • 1 1/2 cups grated Swiss cheese (see shopper's note)
  • 1/2 cup grated cheddar cheese (see shopper's note)
  • Nutmeg (optional)

Preparation

Step 1

Crust:
Place butter and cream cheese in large bowl. Add flour and salt. Work together with a pastry blender.

Gather the soft dough into ball with your hands and pres into a 9-inch pie pan. (Note: This is a perfect job for a child to do. Set ball of dough in middle of pan. Press dough out in all directions to extend slightly over rim.) Using fingers, flute edges. Refrigerate for 1 hour or longer. (Note: Dough can be prepared and placed in pan the day before it's needed. Cover and refrigerate.)

Preheat oven to 450 F.

Filling:
In small bowl, beat eggs. Add half-and-half and salt. Mix well. Layer chicken, broccoli and cheeses in pastry-lined pan. Pour egg mixture over ingredients. Sprinkle with nutmeg.

Bake for 10 minutes. Reduce oven temperature to 300 F. Bake for 30 minutes or until knife inserted comes out clean. Let stand for 10 minutes before cutting.
