Parmesan Crusted Tilapia

A very easy variation of Red Lobster's Parmesan Crusted Tilapia recipe. I add fresh asparagus to the pan 1/3 to 1/2 into the cooking time, depending on the size of the asparagus. For a complete meal serve with Parmeson Cream Linguine, also made with alfredo sauce.

- 4 5-6 ounce tilapia fillets
- 1/2 cup panko breadcrumbs
- 1/2 cup parmesan cheese, shredded
- 1/4 cup parmesan cheese, shredded
- 1/2 tablespoon dried parsley
- 4 ounces alfredo sauce, refrigerated (I use Classico)

Preheat the oven to 425 degrees.
Line a large rimmed baking sheet with parchment paper OR spray cooking spray evenly on a 13x9 baking dish. Lay all four tilapia fillets in the baking sheet or dish.
Combine the panko bread crumbs and 1/2 cup of parmesan cheese in a small bowl. Set aside.
In a medium bowl, mix 1/4 cup of parmesan cheese, 1/2 tablespoon parsley, and the refrigerated alfredo sauce and stir to combine.
Brush each of the tilapia fillets evenly with the mixture. Sprinkle the parmesan bread crumb mixture evenly over the fillets.
Bake the tilapia on the top oven rack for 15 to 20 minutes. Fish is done when the internal temperature reaches 140 to 150 degrees.
