- Dough
- 1 package (1/4-ounce) yeast, rapid rise
- 1/3 cup plus 2 tablespoons warm water
- 1 1/2 cups all-purpose flour
- 1/4 cup (2-ounces) olive oil
- 1/2 teaspoon salt
- 1/8 teaspoon (pinch) sugar
- Filling
- 1 pound ground beef, lean
- 1 package (1 1/4-ounce) taco seasoning mix
- 2 cups (8-ounces) cheddar cheese shredded
- 1 egg plus 1 Tablespoon water for egg wash
- Taco sauce

Step 1
1 8-inch or 9-inch pie pan-greased.
Dough:
Dissolve yeast and the dash sugar in warm water (about 105 degrees F). Then mix all ingredients together in food processor (or by hand) until dough forms a ball. Put dough in lightly oiled bowl and cover. Let rise until doubled, about 1 hour.
Brown meat and drain. Cook the drained meat with taco seasoning according to the taco package directions.
When the dough has risen, put on floured board and divide in half. Roll out half and place on greased pie pan-patting in bottom and sides.
Place 1 cup shredded cheese on bottom of pan. Fill the rest with the taco mixture. Sprinkle one cup shredded cheese on top of the meat.
Roll out the other half of dough and cover pie top. Seal edges by pressing with fork. Cut off excess dough. Prick top crust with fork several times and egg wash top lightly.
Bake in preheated 375F oven for 45 minutes or until done and a light, golden brown.
Serve with a sauce of your choice.
