- 1 cup tortilla chips crushed
- 1 tablespoon butter melted
- 1 pound ground round beef
- 1 package (1 1/4-ounce) taco seasoning mix
- 2 tablespoons water
- 2 packages (16-ounces) cream cheese softened
- 2 large eggs
- 8 ounces (2-cups) cheddar cheese shredded
- 1 cup sour cream
- 2 tablespoons flour
- 2 cups lettuce shredded
- 6 Roma tomatoes diced

Preheat oven to 325 degrees.
Stir together the tortilla chips and melted butter; press into the bottom of a 9-inch springform pan. Bake for 10 minutes.
Remove from oven and cool slightly.
While crust bakes, in a large skillet over medium heat, cook the beef until it crumbles and is no: longer pink. Drain and pat dry. Return the beef to the skillet and add Taco seasoning mix (reserve 1 teaspoon) and 2 tablespoons water, cook over medium heat until liquid evaporates, set aside.
In a large bowl beat the cream cheese until fluffy. Add the eggs, one at a time, and reserved teaspoon of taco mix and beat until blended.
Add the cheddar cheese and mix thoroughly. Spread the cream cheese mixture evenly over the crust and 1 inch up sides of pan (see tester's note below).
Spoon beef mixture in center and spread cream cheese from around sides of pan over beef, forming a 1-inch border.
In a small bowl, combine the sour cream and flour and spread over cheesecake.
Bake at 325 degrees for 30 minutes.
Let cool in pan 10 minutes.
Serve warm with lettuce and tomato.
Tester's note: The only tricky step in this recipe is getting a layer of cream cheese batter along the sides of the springform pan. Use a small offset spatula to spread some of the batter about 1 inch up the sides, as if you were frosting a cake. Pour all but about 2/3 cup of the remaining batter over the crust and; spread evenly with the spatula. Spoon in the beef mixture, and then use the spatula to spread reserved 2/3 cup batter in a ring over the filling. Don't worry about making it perfect the sour cream mixture will hide any blemishes.
