Ingredients

  • 1-10 oz package frozen spinach, thawed and drained
  • 1 cup milk
  • 1/2 cup butter
  • 1 tsp salt
  • 1 cup flour
  • 4 large eggs
  • 1/4 cup shredded swiss
  • 1/2 cup parmesan

Preparation

Step 1

1. In 3 qt saucepan over medium heat, combine milk, butter and salt until butter melts and mixture boils.
2. Remove saucepan from heat. With wooden spoon vigorously stir in flour all at once until mixture forms a ball and leaves side of pan.
3. Add eggs to flour mixture, one at a time, beating well after each addition, until mixture is smooth and satiny.
4. Stir in cheeses and spinach. If not baking right away, cover surface of mixture w/ plastic wrap and refrigerate.
5. Oven 375. Lightly grease 2 large cookies sheets. Drop batter by level tablespoons onto cookie sheets, about 1-1/2" apart. Bake 15-20" until cheese puffs are golden brown, serve immediately.
