Ingredients

  • 1/2 pound Italian sausage links 1/4 inch slices
  • 1 small red pepper sliced
  • 1 small green pepper sliced
  • 1 small purple onion sliced
  • 1 can (14 1/2-ounce) Italian tomatoes undrained-chopped
  • 1/2 teaspoon Italian seasoning-dried
  • Fresh Parmesan cheese grated
  • Rice cooked

Step 1

Cook sausage slices in skillet over medium heat 5 minutes or until browned. Add sliced peppers and onion, and cook 5 minutes or until tender. Drain.
Add tomatoes and Italian seasoning to sausage mixture; cook until thoroughly heated. Spoon mixture over polenta or rice; sprinkle with Parmesan cheese.
Yield: 2 to 3 servings.
