  • 4 (8-inch) tortilla shells soft
  • 2 cans (about 10 3/4 -ounces) cream of chicken soup
  • 4 medium chicken breast cooked and chopped
  • salsa
  • green chiles
  • chicken broth
  • cheddar cheese
  • Monterey jack cheese
  • 1 package fajita seasoning

Step 1

Boil four chicken breasts in water seasoned with salt, pepper and 1/2 -3/4 teaspoon fajita seasoning. Save the broth for use in the sauce. Put soup and enough chicken stock to make a thick sauce in a sauce pan and heat, add a generous sprinkling of the fajita seasoning (to taste) and salsa (medium or mild) as much as you wish. A lot of this recipe is to taste, but it is easy and delicious and you can not go wrong.
Use an 8" x 8" pan which has been sprayed with Pam.
Place 1 open tortilla shell in pan, cut or chop the cooked chicken into pieces and spread a generous quantity down center of shell. Spoon sauce down center, using enough to be juicy. Slice thin slices of green chiles, depending on how hot you wish it to be. Sprinkle with cheese and roll up, placing closed open side to bottom of pan. When you have made 4 tortillas, pour sauce over all and sprinkle generously with cheese.
Bake 350 degrees F. for 30 to 40 minutes until bubbly and cheese is browned.
