Ingredients
- 1 1/2 cups all-purpose flour
- 1 stick (1/2 cup; 4-ounces) butter softened
- 3 tablespoons brown sugar sifted
- TOPPING
- 10 tablespoons butter cut into cubes
- 3 tablespoons brown sugar soft
- 1 can (14-ounces) condensed milk, sweetened
- ICING
- 5 1/2 ounces (small bag) milk chocolate chips

Grease a 9-inch square or a 9 x 11-inch rectangle cake pan.
Shortbread base:
Sift flour into food processor and add cold butter; process off and on until the mixture resembles fine bread crumbs. (May mix the butter into the flour with your fingers.) Add the sugar and mix to form a firm dough. Move to a lightly floured surface and knead. Press kneaded pieces into the bottom of the prepared pan and prick with a fork.
Bake in preheated oven 375 degrees F for 20 minutes or until light golden brown. Leave to cool.
Topping:
Place the butter, sugar and condensed milk in a non-stick sauce pan; cook over gentle heat, stirring constantly, until the mixture comes to a boil. Reduce the heat and cook for 4-5 minutes until the mixture is pale golden and thick and coming away from the sides of the saucepan. Pour the topping over the shortbread base and leave to cool completely.
Milk Chocolate Icing:
Melt the milk chocolate in heat proof bowl set over simmering water. Spread over the firm, completely cool topping. Leave to set in a cool placed.
Cut into 12 squares or fingers.
Freezes well in air tight container.
