Ingredients
- 1 cup (2-sticks) butter, unsalted room temperature
- 1 cup sugar
- 1 large egg separated
- 2 cups all-purpose flour sifted
- 1 1/2 tablespoons lemon peel, grated optional
- 1 cup pecans finely chopped

Step 1
Preheat oven to 275 degrees F.
Grease 15x10-inch jelly roll pan; line with parchment.
Cream butter with sugar in large bowl until light and fluffy. Beat in yolk. Mix in flour and lemon peel. Spread dough evenly in prepared pan.
Beat egg white in small bowl to blend. Brush over dough. Sprinkle nuts over; press lightly into dough.
Bake pastry until golden brown, about 1 1/4 hours. Keep checking to see if done.
Cut pastry into 2 1/2-inch squares. Halve each square diagonally forming triangles.
Cool on rack.
(Store airtight. Can be frozen 1 month.)
