Ingredients

  • 1 cup ( 2 sticks; 16-ounces) butter room temperature
  • 1 1/2 cups powdered sugar
  • 3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 large egg slightly beaten
  • 1 teaspoon vanilla
  • 1 cup pecans, toasted chopped

Step 1

Refrigerate dough.
Cream butter and sugar thoroughly in large bowl. Sift flour with salt ; add 1 cup of the flour to creamed sugar mixture and beat well. Blend in egg, then vanilla, scraping bottom and sides of bowl often. Beat in remaining flour, stir in nuts. Shape into 2 rolls about 2-inch in diameter. Wrap in waxed paper.
CHILL until they are firm and ready to bake.
Remove from refrigerator and slice into 1/8-inch thick slices; place on lightly greased cookie sheet and bake at 350 degrees F. for about 10 minutes or until edges ONLY are brown. Do not over bake.
Yield 9-10 dozen.
Cookies freeze well.
