  • 1/8 teaspoon salt
  • 1/2 cup light corn syrup
  • 1/2 cup boiling water
  • 2 large egg white
  • 1 teaspoon vanilla extract

Step 1

Best to make on a dry day.
Combine the sugar, salt, corn syrup and water in a heavy sauce pan;
Cook on medium heat. Stir until sugar is completely dissolved.
To remove sugar crystals wash down sides with pastry brush dipped in cold water.
Cook until boiling without stirring; then cook until reaches hard ball stage (252 F.).
Set aside.
Beat egg whites on high mixer speed until stiff peaks form. While mixer is still on high speed, slowly pour syrup mixture over the stiff egg whites. Add vanilla. Continue beating until candy loses gloss (about 5-7 minutes).
Drop by spoon full onto waxed paper.
