Ingredients
- 1 1/2 sticks (3/4-cups) unsalted butter plus extra for greasing
- 1 cup superfine sugar (*needs more)
- 3 extra large eggs
- 1 cup all-purpose flour
- 1 cup self-rising flour
- 2 tablespoons (or 3) brandy or milk
- 2 slices citron peel, optional

Step 1
7-inch round, deep pan
Preheat the oven to 325F. Grease and line a 7-inch round deep cake pan.
Cream together the butter and sugar until pale and fluffy. Add the lemon rind and gradually beat in the eggs. Sift in the flours and fold In evenly, adding enough brandy to make a soft consistency.
Spoon the batter into the prepared pan and smooth the surface.
Lay the slices of citron peel on top of the cake.
Bake in the preheated oven for 1-1 1/4 hours, or until well risen, golden brown, and springy to the touch.
Cool in the pan for 10 minutes, then turn out and cool completely on a wire rack.
