Ingredients
- 1 cup (2 sticks; 8-ounces) butter
- 2 cups light brown sugar firmly packed
- 1/2 cup buttermilk
- 1 teaspoon baking soda soda
- 2 tablespoons white corn syrup
- 1 pinch salt
- 1 teaspoon vanilla extract

Yield: enough for 1 (9-inch) 2-layer cake or 1 (13-x-9-inch) 1-layer cake
Preparation: 15 minutes Cook: 15 to 20 minutes Cool: 20 minutes
IN A 3-QUART SAUCEPAN, combine all ingredients. Cook over low heat, stirring until ingredients are dissolved. Continue to stir until mixture reaches desired caramel color. (For a thick, spreadable icing, cook mixture until it reaches the soft-ball stage, 234° to 240°. Reducing cooking time will produce a thinner, pourable icing that will thicken as it cools.)
